Description

A shockingly easy and tasty ground beef and potato soup. It’s made in minutes in your Instant Pot and is perfect for a day you just don’t feel like exerting lots of effort into cooking dinner!


Ingredients

Scale
  • 1 pound ground beef
  • 1 Tbsp dehydrated minced onions
  • 4 cups chicken broth
  • 1 (28 oz) bag frozen O’Brien potatoes
  • 1 (2.64 oz) packet country gravy mix
  • 1 cup shredded sharp cheddar cheese

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the minced onions. Brown for about 5 minutes. Drain off excess grease. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking.
  3. Dump in the potatoes. Sprinkle the country gravy mix on top of the potatoes. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit 5-10 minutes and then move valve to venting. Remove the lid.
  5. Stir in the cheese. 
  6. Ladle into bowls and serve.

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the minced onions. Brown for about 5 minutes. Drain off excess grease. Add into the slow cooker.
  2. Stir in the broth, potatoes and country gravy mix. 
  3. Cover and cook on low for 4 hours. 
  4. Stir in the cheese. 
  5. Ladle into bowls and serve.
