Description

Easy ground beef chili with lots of flavor and very little work. Make this copycat recipe at home in your Instant Pot or Crockpot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 jalapeno, seeded and diced
  • 2 Tbsp minced garlic
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 tsp kosher salt
  • 1 1/2 tsp Italian seasoning
  • 1 1/2 tsp brown sugar
  • Pinch of red pepper flakes
  • 1 cup beef broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 oz) can kidney beans, rinsed and drained
  • 1 1/2 tsp red wine vinegar
  • 1 Tbsp corn meal
  • Toppings: shredded colby jack cheese, diced green onions, Fritos or tortilla chips, sour cream

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the ground beef and break it up. Add in the onion and jalapeno. Brown for about 5 minutes. Drain off excess grease. 
  2. Add in the garlic, chili powder, cumin, smoked paprika, pepper, salt, Italian seasoning, brown sugar and red pepper flakes. Stir to coat the meat. Turn off Instant Pot.
  3. Stir in the beef broth and scrape bottom of pot so that nothing is sticking. 
  4. Dump in the tomatoes, beans, vinegar, and corn meal. Don’t stir. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 10 minutes. When time is up let the pot sit for 10 minutes and then move valve to venting. 
  6. Stir well. Add more seasonings to taste, as needed. Ladle into bowls and top with desired toppings. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onion and jalapeno. Brown for about 5 minutes. Drain off excess grease. 
  2. Add in the garlic, chili powder, cumin, smoked paprika, pepper, salt, Italian seasoning, brown sugar and red pepper flakes. Stir to coat the meat. Add meat to slow cooker.
  3. Stir in the beef broth, tomatoes, beans, vinegar, and corn meal.  
  4. Cover and cook on low for 6-10 hours. 
  5. Stir well. Add more seasonings to taste, as needed. Ladle into bowls and top with desired toppings.
