Description
Instant Pot Skinny Soup only has 150 calories per serving but has tons of flavor and a lot of bite. It’s not just broth! There’s tons of vegetables and some meat too. Perfect for lunch or dinner on a chilly day.

- 1 pound lean ground turkey or ground beef
- 2 Tbsp minced dry onion or 1 cup diced onion
- 1 tsp cajun seasoning
- 5 cups water
- 2 Tbsp Better than Bouillon Beef or Chicken Base
- 3 carrots, peeled and sliced
- 1 (15.25 oz) can corn, drained (or 1 1/2 cups frozen corn)
- 1 (15.25 oz) can green beans, drained (or 1 1/2 cups frozen or fresh)
- 1 (28 oz) crushed tomatoes
- 3 ribs of celery, sliced
- 4 cups chopped cabbage
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1/2 tsp kosher salt
- 1 Tbsp Worcestershire sauce
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the turkey and break it up. Add in the onion and cajun seasoning. Brown for about 5 minutes.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the Better than Bouillon.
- Add in carrots, corn, green beans, tomatoes, celery, cabbage, garlic powder, onion powder, pepper, salt and Worcestershire sauce. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 8 minutes. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir the soup. Ladle into bowls and serve.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the turkey and break it up. Add in the onion and cajun seasoning. Brown for about 5 minutes. Add into the slow cooker.
- Add in water, Better than Bouillon, carrots, corn, green beans, tomatoes, celery, cabbage, garlic powder, onion powder, pepper, salt and Worcestershire sauce.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir the soup. Ladle into bowls and serve.
