Description

Instant Pot Skinny Soup only has 150 calories per serving but has tons of flavor and a lot of bite. It’s not just broth! There’s tons of vegetables and some meat too. Perfect for lunch or dinner on a chilly day.  


Ingredients

  • 1 pound lean ground turkey or ground beef
  • 2 Tbsp minced dry onion or 1 cup diced onion
  • 1 tsp cajun seasoning
  • 5 cups water
  • 2 Tbsp Better than Bouillon Beef or Chicken Base
  • 3 carrots, peeled and sliced
  • 1 (15.25 oz) can corn, drained (or 1 1/2 cups frozen corn)
  • 1 (15.25 oz) can green beans, drained (or 1 1/2 cups frozen or fresh)
  • 1 (28 oz) crushed tomatoes
  • 3 ribs of celery, sliced
  • 4 cups chopped cabbage
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1/2 tsp kosher salt
  • 1 Tbsp Worcestershire sauce

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the turkey and break it up. Add in the onion and cajun seasoning. Brown for about 5 minutes. 
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the Better than Bouillon.
  3. Add in carrots, corn, green beans, tomatoes, celery, cabbage, garlic powder, onion powder, pepper, salt and Worcestershire sauce. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 8 minutes. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir the soup. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the turkey and break it up. Add in the onion and cajun seasoning. Brown for about 5 minutes. Add into the slow cooker.
  2. Add in water, Better than Bouillon, carrots, corn, green beans, tomatoes, celery, cabbage, garlic powder, onion powder, pepper, salt and Worcestershire sauce. 
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Stir the soup. Ladle into bowls and serve.
