Instant Pot Parmesan Ranch Potatoes

Description

Tender cubes of red potatoes covered in a flavorful cheesy sauce. With only a 2 minute pressure cook time this recipe comes together so quickly.


Ingredients

Scale
  • 1 cup chicken broth
  • 2 pounds red potatoes, scrubbed clean and cut into 1 inch cubes
  • 3 Tbsp dry ranch dressing mix
  • 1/2 tsp kosher salt
  • 1 cup shredded parmesan cheese

Instructions

Instant Pot Instructions:

  1. Pour broth into Instant Pot. Add in the potatoes, ranch dressing mix and salt.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid. 
  3. Turn Instant Pot to sauté setting. Add a quarter cup of the cheese and then stir until melted. Repeat until all the cheese is used. Turn off sauté setting. 
  4. Scoop onto plates and serve. Top with green onions or chives, if desired. 

Slow Cooker Instructions:

  1. Pour broth, potatoes, ranch dressing mix and salt into slow cooker and stir.
  2. Cover and cook on high for 3-4 hours, or until potatoes are tender. 
  3. Add a quarter cup of the cheese and then stir until melted. Repeat until all the cheese is used.
  4. Scoop onto plates and serve. Top with green onions or chives, if desired. 

Notes

To make this ahead of time I suggest cooking the recipe through step 2 but do not release the pressure and do not remove the lid until you’re ready to finish the recipe off. When you’re ready to serve finish up the recipe with step 3.
