Instant Pot Million Dollar Chicken Casserole

Description

This Instant Pot million dollar chicken casserole recipe has chicken (or you can use leftover turkey), cream cheese, cottage cheese, sour cream and buttery Ritz cracker topping. It is comfort food to the max.  


Ingredients

Scale
  • 1 cup chicken broth
  • 2 pounds boneless, skinless chicken thighs or breasts (or a combination)
  • Salt and pepper
  • 4 oz cream cheese, softened
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp pepper
  • 1/4 tsp celery salt
  • 1/4 cup cornstarch or arrowroot + 1/4 cup cold water
  • Optional: 1/2 to 1 cup of leftover cooked rice
  • 1 sleeve Ritz crackers, crushed
  • 5 Tbsp butter, melted

Instructions

Instant Pot Instructions:

  1. Pour broth into Instant Pot. Add in the chicken. Sprinkle the chicken with a little salt and pepper.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes for fresh chicken or 15 minutes for frozen chicken. When time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
  3. Move chicken to a cutting board and chop. Set aside.
  4. Add cream cheese, cottage cheese, sour cream, onion powder, garlic powder, kosher salt, pepper and celery salt into the broth that is in the Instant Pot. Whisk until smooth and creamy. 
  5. Turn Instant Pot to saute setting. In a small bowl stir together the cornstarch and cold water until smooth. Pour the mixture into the Instant Pot to thicken the sauce. Once it has thickened turn off the Instant Pot. 
  6. Stir in the chopped chicken (and the rice, if using). 
  7. In a bowl stir together the crushed Ritz crackers and the melted butter. If you have an air fryer lid then sprinkle the cracker mixture over the top of the contents of the Instant Pot. Then air fry for 4-5 minutes at 400 degrees F. If you don’t have an air fryer lid you can brown the cracker topping in a saute pan on the stove. Heat pan over medium high heat and add in the buttered crumbs. Toss for a few minutes until browned and crispy. Sprinkle the crackers over the contents in the Instant Pot.
  8. Scoop onto plates and enjoy!

Slow Cooker Instructions: 

  1. Pour broth into slow cooker. Add in the chicken. Sprinkle the chicken with a little salt and pepper.
  2. Cover and cook on low for 4-6 hours.
  3. Move chicken to a cutting board and chop. Set aside.
  4. Add cream cheese, cottage cheese, sour cream, onion powder, garlic powder, kosher salt, pepper and celery salt into the broth that is in the slow cooker. Whisk until smooth and creamy. 
  5. Turn slow cooker to high setting. In a small bowl stir together the cornstarch and cold water until smooth. Pour the mixture into the slow cooker.
  6. Stir in the chopped chicken (and the rice, if using). 
  7. Cook on high without the lid for 30 more minutes. 
  8. In a bowl stir together the crushed Ritz crackers and the melted butter. Heat pan over medium high heat and add in the buttered crumbs. Toss for a few minutes until browned and crispy. Sprinkle the crackers over the contents in the slow cooker.
  9. Scoop onto plates and enjoy!

Notes

4-5 cups of cooked chopped chicken or turkey can be used instead of the uncooked chicken. Pour 1 cup of broth into Instant Pot and then move on to step 4 of the recipe. 

You can also bake this as a casserole in the oven. Pour cooked chicken mixture into a square baking dish and top with ritz crackers. Bake at 350 degrees F for 25 minutes.
