Description

Linguine noodles with sliced ham, broccoli and a light creamy sauce. Made fast and easy in your pressure cooker!


Ingredients

  • 1 Tbsp butter
  • 12 cups julienned fully cooked ham
  • 2 1/2 cups chicken broth
  • 8 ounces linguine
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 2 tsp dijon mustard
  • 1 (12 oz) package frozen broccoli
  • 1/3 cup heavy cream
  • 1 cup shredded parmesan cheese

Instructions

  1. Turn Instant Pot to saute setting. When the display says HOT add in the butter and ham and saute for 2 minutes. Pour in 1 ½ cups of the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  2. Break the linguine in half and scatter it in a criss cross pattern into the pot. 
  3. Add in the onion powder, garlic, powder, thyme, pepper and mustard. Pour the remaining broth over the top. 
  4. Place a tall trivet into the pot. Pour the broccoli into a pot-in-pot dish. Place the dish on top of the trivet. 
  5. Cover the Instant Pot and secure the lid. Make sure valve is set sealing. Set the manual/pressure cook button to 7 minutes. When time is up move the valve to venting and remove the lid.
  6. Remove the broccoli pan. Stir the broccoli into the linguine. Stir in the cream and parmesan cheese. 
  7. Scoop onto plates and serve. 

Notes

I chose to cook my vegetables with the pot in pot method. If you add the peas or broccoli straight in with the pasta it will get way overcooked. By putting it in a pan on top of a tall trivet the vegetables cook at the same rate as the pasta. You can also choose to cook your vegetables another way if you don’t have a trivet and pot-in-pot dish and then just stir them in later.
