Description

One bite of this beefy tortilla casserole and you’ll know why it’s named happiness casserole! It’s fast and easy to make, has easy ingredients and tastes so good. 


Ingredients

Scale
  • 1 pound ground beef or ground turkey
  • 1 cup diced onion
  • 1 diced jalapeño
  • 1/2 tsp kosher salt
  • 1 cup beef or chicken broth
  • 1 Tbsp chili powder
  • 2 tsp cumin
  • 1 (10 oz) can Rotel (I used mild)
  • 1 (15 oz) can ranch style beans, undrained
  • 1 (10.75 oz) can cream of mushroom or cream of chicken soup (Campbell’s brand)
  • 16 (5 inch) white corn tortillas
  • 1 cup shredded cheddar cheese

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté (more) setting. When display says HOT add in the beef and break it up. Add in the onions and jalapeños. Brown for about 5 minutes. Drain any excess grease. Stir in the salt.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Then layer chili powder, cumin, Rotel, beans and creamy of mushroom soup on top. Don’t stir.
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up move valve to venting and remove the lid.
  4. Cut or tear the tortillas into one inch squares. Stir the tortillas into the pot. Stir in the cheese.
  5. Scoop onto plates and serve topped with sour cream and diced avocados. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Brown the ground beef with the onions and jalapenos for about 5 minutes. Drain excess grease. Stir in the salt, chili powder and cumin.
  2. Cut or tear the tortillas into one inch squares. 
  3. Layer the following ingredients in your slow cooker 2 times: meat mixture, beans, Rotel, cream of mushroom soup, tortillas and then cheese.
  4. Cover and cook on high for 2-3 hours or on low for 4 hours.
  5. Scoop onto plates and serve topped with sour cream and diced avocados.
