Description
Penne pasta with chicken, bruschetta, spinach, garlic and parmesan cheese. A simple recipe with amazing flavor!

- 1 1/2 tsp olive oil
- 2 Tbsp minced garlic
- 2 cups chicken broth
- 8 ounces penne
- 3 cups cooked, chopped chicken
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 1/2 tsp garlic powder
- 1 1/2 tsp italian seasoning
- 1/4 tsp smoked paprika
- 1/4 tsp red pepper flakes
- Spinach
- 1 (9.88 oz) jar Delallo tomato bruschetta
- Parmesan cheese, for serving
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil. Add garlic and saute for 30 seconds. Pour in the broth so that garlic doesn’t burn.
- Turn off Instant Pot. Sprinkle in the penne. Dump in the chicken, salt, pepper, garlic powder, Italian seasoning, paprika, red pepper flakes. Add in plenty of spinach, about 2 big handfuls. Dump in the bruschetta. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir well. Scoop onto plates and sprinkle each serving with a tablespoon of parmesan cheese.
