Description

Penne pasta with chicken, bruschetta, spinach, garlic and parmesan cheese. A simple recipe with amazing flavor!


Ingredients

  • 1 1/2 tsp olive oil
  • 2 Tbsp minced garlic
  • 2 cups chicken broth
  • 8 ounces penne
  • 3 cups cooked, chopped chicken
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp italian seasoning
  • 1/4 tsp smoked paprika
  • 1/4 tsp red pepper flakes
  • Spinach
  • 1 (9.88 oz) jar Delallo tomato bruschetta
  • Parmesan cheese, for serving

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil. Add garlic and saute for 30 seconds. Pour in the broth so that garlic doesn’t burn.
  2. Turn off Instant Pot. Sprinkle in the penne. Dump in the chicken, salt, pepper, garlic powder, Italian seasoning, paprika, red pepper flakes. Add in plenty of spinach, about 2 big handfuls. Dump in the bruschetta. Don’t stir.
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  4. Stir well. Scoop onto plates and sprinkle each serving with a tablespoon of parmesan cheese.
