Description

Bowtie pasta with Italian sausage, tomatoes, mushrooms and spinach. A flavorful dinner that comes together quickly with the help of your Instant Pot. 


Ingredients

  • 1 pound ground Italian sausage
  • 1 cup diced onion
  • 8 ounces sliced or chopped mushrooms
  • 3 cups chicken broth
  • 2 tsp garlic powder
  • 1 (12 oz) box bowtie pasta
  • 1 (14.5 oz) can petite diced tomatoes
  • 23 cups spinach
  • 1/4 cup heavy cream
  • 2 tsp cornstarch
  • 1/4 tsp ground nutmeg
  • Parmesan cheese, for serving

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break up. Brown for about 5 minutes. Add in the onions and mushrooms and saute for about 3 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Add in the garlic powder, sprinkle in the pasta, dump in the tomatoes, dump in the spinach. Don’t stir. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. In a small bowl whisk together the cream and cornstarch together until smooth. Add in about a quarter cup of the hot liquid from the Instant Pot into the slurry. Pour the slurry into the Instant Pot. Turn Instant Pot to saute setting and once the sauce has thickened turn off the pot. 
  6. Stir in the ground nutmeg and serve topped with parmesan cheese.
