Instant Pot Chocolate Cobbler

Description

A delicious brownie-like cake on the top with a rich, fudgy sauce on the bottom. Chocolate cobbler is like a lava cake but so much easier to make for a crowd. This is great for family dinners, potlucks and more! You can make this in your Instant Pot, slow cooker or oven. 


Ingredients

Scale
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 1/4 cup cocoa powder
  • 2 cups all purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tsp vanilla extract
  • 1 tsp chocolate extract (optional)
  • Vanilla ice cream

For topping:

  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 tsp salt
  • 1 Tbsp cocoa
  • 1 cup boiling water

Instructions

Instant Pot Instructions:

  1. Melt the butter and set aside to cool.
  2. Pour 1 ½ cups water into bottom of Instant Pot.
  3. In a mixing bowl whisk together the sugar, cocoa powder, flour, baking powder and salt. 
  4. Stir in the butter, milk, vanilla and chocolate extract. 
  5. Spray a deep pot-in-pot dish with non-stick cooking spray. Scrape the batter into the dish. 
  6. Make the topping by whisking the sugar, brown sugar, salt and cocoa together. Sprinkle the mixture over the top of the batter. Pour the boiling water over the top and do not stir.
  7. Place the pan on top of a trivet/sling and lower the dish into the Instant Pot. 
  8. Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 35 minutes. When time is up move valve to venting. Remove the lid. Remove the pan and sling out of the pot.
  9. The cake will rise to the top and a chocolate sauce will form on the bottom. Scoop some of the cake into bowls, top with a scoop of vanilla ice cream and drizzle some of the chocolate sauce over the top of the ice cream. 

Slow Cooker Instructions:

  1. Melt the butter and set aside to cool.
  2. Spray a crockpot with nonstick cooking spray.
  3. In a mixing bowl whisk together the sugar, cocoa powder, flour, baking powder and salt. 
  4. Stir in the butter, milk, vanilla and chocolate extract. 
  5. Scrape the batter into the slow cooker.
  6. Make the topping by whisking the sugar, brown sugar, salt and cocoa together. Sprinkle the mixture over the top of the batter. Pour the boiling water over the top and do not stir. 
  7. Cover and cook on low for 4 hours or on high for 2-3 hours. 
  8. The cake will rise to the top and a chocolate sauce will form on the bottom. Scoop some of the cake into bowls, top with a scoop of vanilla ice cream and drizzle some of the chocolate sauce over the top of the ice cream. 

Oven Instructions:

  1. Preheat oven to 350 F.
  2. Melt the butter and set aside to cool.
  3. Spray a 9×13 inch baking dish with nonstick cooking spray.
  4. In a mixing bowl whisk together the sugar, cocoa powder, flour, baking powder and salt. 
  5. Stir in the butter, milk, vanilla and chocolate extract. 
  6. Scrape the batter into the pan. 
  7. Make the topping by whisking the sugar, brown sugar, salt and cocoa together. Sprinkle the mixture over the top of the batter. Pour the boiling water over the top and do not stir. 
  8. Bake for 40 minutes or until top is set. The cake will rise to the top and a chocolate sauce will form on the bottom. Scoop some of the cake into bowls, top with a scoop of vanilla ice cream and drizzle some of the chocolate sauce over the top of the ice cream. 

Notes

I used a 3 quart Instant Pot liner* inside by 6 quart Instant Pot liner as a pot-in-pot dish. You can also use a 7×4 inch Fat Daddios pan*.
