Instant Pot Cheesy Beef Tortellini

Description

Beef smoked sausage, tortellini, spinach, mozzarella and parmesan make an easy and fast one pot dinner. 


Ingredients

  • 1 tsp olive oil
  • 1 (12 oz) package beef smoked sausage
  • 1 cup beef broth
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 (19 oz) package frozen cheese tortellini
  • 2 cups chopped spinach
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese

Instructions

Instant Pot Instructions:

  1. Slice the smoked sausage into quarter inch rounds.
  2. Turn Instant Pot to sauté setting. When display says HOT add in the oil and swirl it around. Add in the sausage and brown for a couple minutes to add some color. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. Stir in the Italian seasoning and garlic powder. Dump in the frozen tortellini. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cooking button to 0 (yes zero!) minutes on LOW pressure. 
  6. When time is up let pot sit for 3 minutes and then move valve to venting and remove the lid.
  7. Stir in the spinach, mozzarella and parmesan cheese.
  8. Scoop onto serving plates and enjoy!

Slow Cooker Instructions:

  1. Slice the smoked sausage into quarter inch rounds.
  2. Add broth, smoked sausage, Italian seasoning, garlic powder, tortellini and spinach into slow cooker. 
  3. Cover and cook on high for 2 hours or on low for 3 hours. 
  4. Stir in the mozzarella and parmesan cheese.
  5. Scoop onto serving plates and enjoy!
