Description

Cheese, bean and ground turkey/beef enchiladas with a twist! Biscuit dough is used instead of tortillas.


Ingredients

Scale
  • 1 pound ground turkey or ground beef
  • Salt and pepper
  • 1 cup beef broth
  • 1 (14.5 oz) can black or pinto beans, rinsed and drained
  • 1 (10 oz) can of enchilada sauce
  • 1 (4 oz) can of diced green chiles
  • 1 (12 oz) can of Pillsbury biscuit or crescent roll dough
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • Optional garnishes: cilantro, diced tomatoes, sour cream, sliced avocados

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the meat and break it up. Brown for about 5 minutes. Drain off excess grease. Salt and pepper the meat to taste. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off sauté setting.
  3. Dump in the beans, enchilada sauce and green chiles. Do not stir.
  4. Cut each of the biscuit dough into 6 pieces. Drop the biscuit pieces on top and do not stir.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting and remove the lid. 
  6. Stir well. Sprinkle cheeses on top evenly and place lid on top and let the cheese melt for about 5 minutes. 
  7. Scoop onto plates and top with optional garnishes. Eat and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the meat and break it up. Brown for about 5 minutes. Drain off excess grease. Salt and pepper the meat to taste. Pour the meat into the slow cooker.
  2. Add in the broth, beans, enchilada sauce and green chiles. Stir.
  3. Cut each of the biscuit dough into 6 pieces. Drop the biscuit pieces into slow cooker and gently stir to coat.
  4. Cover and cook on high for 2 hours or on low for 4 hours.
  5. Sprinkle cheeses on top evenly and place lid on top and let the cheese melt for about 5 minutes. 
  6. Scoop onto plates and top with optional garnishes. Eat and enjoy!
