Instant Pot Bojangles Dirty Rice

Description

A copycat recipe of the restaurant’s flavorful rice dish with sausage, seasonings and bell pepper. 


Ingredients

Scale
  • 1 pound ground breakfast sausage (I used Jimmy Dean)
  • 1 cup diced onion
  • 1 Tbsp minced garlic
  • 2 cups chicken broth
  • 1 1/2 cups converted rice
  • 1/4 tsp cayenne pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 red or green bell pepper, cored and diced

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Add in the garlic and stir it in. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice, cayenne, paprika, pepper and finally the bell pepper. Don’t stir. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir. Serve and enjoy!
