Description
A grown-up, homemade version of your favorite childhood soup. This soup only has a handful of ingredients and is perfect on a chilly day.

- 1 pound lean ground beef
- 1 cup diced onion
- 1/2 tsp black pepper
- 1/2 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 cups beef broth
- 1 Tbsp Worcestershire sauce
- 1 (14.5 oz) can petite diced tomatoes
- 2 (8 oz) cans tomato sauce
- 1/2 cup alphabet pasta or orzo pasta
- 1 (12 oz) bag frozen mixed vegetables
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break if up. Add in the onions. Brown for about 5 minutes. Drain off excess grease.
- Stir in the pepper, salt, garlic powder and Italian seasoning.
- Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Dump in the Worcestershire, tomatoes, tomato sauce, pasta and vegetables. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 0 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir well. Salt and pepper to taste. Ladle into bowls and serve.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break if up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Add beef and onions to slow cooker.
- Stir in the pepper, salt, garlic powder, Italian seasoning, broth, Worcestershire, tomatoes and tomato sauce.
- Cover and cook on low for 3 hours. Stir in the pasta and vegetables and cook on high for 30-60 minutes, or until cooked through.
- Salt and pepper to taste. Ladle into bowls and serve.
