Description

A grown-up, homemade version of your favorite childhood soup. This soup only has a handful of ingredients and is perfect on a chilly day.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cups beef broth
  • 1 Tbsp Worcestershire sauce
  • 1 (14.5 oz) can petite diced tomatoes
  • 2 (8 oz) cans tomato sauce
  • 1/2 cup alphabet pasta or orzo pasta
  • 1 (12 oz) bag frozen mixed vegetables

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break if up. Add in the onions. Brown for about 5 minutes. Drain off excess grease.
  2. Stir in the pepper, salt, garlic powder and Italian seasoning. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  4. Dump in the Worcestershire, tomatoes, tomato sauce, pasta and vegetables. Don’t stir.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 0 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. Stir well. Salt and pepper to taste. Ladle into bowls and serve. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break if up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. Add beef and onions to slow cooker. 
  2. Stir in the pepper, salt, garlic powder, Italian seasoning, broth, Worcestershire, tomatoes and tomato sauce.
  3. Cover and cook on low for 3 hours. Stir in the pasta and vegetables and cook on high for 30-60 minutes, or until cooked through. 
  4. Salt and pepper to taste. Ladle into bowls and serve.
