Description

A hearty casserole with sausage, beans, corn and a cornbread cheddar topping.  


Ingredients

Scale
  • 1 pound ground Italian sausage
  • 1 small onion, finely diced
  • 1 (15 oz) can corn, drained
  • 2 (8 oz) cans tomato sauce
  • 1 (15 oz) can Ranch style beans
  • 2/3 cup flour
  • 1/2 cup yellow cornmeal
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup milk
  • 2 eggs
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Heat oven to 425° F. 
  2. Heat a large oven safe pan over medium high heat. Add in the sausage and onions. Brown for 5 minutes.
  3. Stir in the corn, tomato sauce and beans. Simmer for 5 minutes on low heat.
  4. In a small bowl whisk together flour, cornmeal, sugar, baking powder and salt. Stir in the milk and eggs. Spoon the batter over the meat/bean mixture.
  5. Bake for 20 minutes. Sprinkle the cheese on top and bake for 5 more minutes to melt the cheese.
  6. Serve and enjoy!
