Description

A creamy, one-pan pasta dish that brings together the flavors of a baked pasta casserole without the need for baking. It is rich and cheesy but it is balanced with a savory tomato base and hearty ground beef.


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 6 ounces rigatoni
  • 1 (25 oz) jar roasted garlic pasta sauce
  • 1 1/2 cups water
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1 ounce cream cheese
  • 1/3 cup parmigiano reggiano
  • 1 Tbsp dried parsley
  • 1 Tbsp dried chives
  • 4 ounces shredded mozzarella cheese

Instructions

  1. Heat a large pan over medium high heat. Add in the ground beef and break it up. Add in the onion, salt, pepper and garlic powder. Brown the ground beef for 5 minutes. 
  2. Stir in the rigatoni, pasta sauce, water. Bring to a boil. Reduce heat to medium low heat. Cover the pan and cook for 15 minutes. 
  3. While that is cooking in a bowl beat together the cottage cheese, sour cream, cream cheese, parmigiano reggiano, parsley and chives until creamy and smooth. 
  4. Spoon the cottage cheese mixture evenly over the beef and noodles. Sprinkle with mozzarella cheese. Cover and cook for 5 more minutes. 
  5. Remove from heat. Serve and enjoy!
