Happy 2016 everyone! I’m back after a little break and happy to be here. I hope you are all having a wonderful January so far.

For me, January is probably my first or second worst month. It’s between January and February. They are both so cold and dreary, the holidays are over, all the yummy Christmas treats are gone. Back to life, back to reality, back to healthy eating.

Well, I guess healthy eating doesn’t have to be horrible after all. Here are 10 warm and comforting soups that you need to make pronto. It may just make January your third worst month instead of your first worst month ๐Ÿ™‚

Note: I like to use my 6 quart slow cooker for all of these soups.* This is my favorite slow cooker.ย 

1.ย Slow Cooker Greek Lemon Chicken Soup

Ingredients you’ll need for this soup:

7 1/2 cups chicken broth
1 medium onion, julienned
8 garlic cloves, minced
1 lemon, zested and juiced
1 – 1 1/2 lbs of boneless, skinless chicken breasts
1/2 tsp crushed red pepper
3 egg yolks
1 cup uncooked couscous
Salt and pepper
Feta cheese
Fresh chives

2. Slow Cooker Ground Turkey Sausage, Barley and Mushroom Soup

Ingredients you’ll need for this soup:

1 lb turkey sausageย (we always findย this kind in the freezer sectionย of the groceryย storeย or sometimes we can find this kindย in associated foodย stores)
1 medium onion
1 Tbsp tomato paste
1 cup diced celery
2 carrots (smallish) diced or grated
1/2 cup pearl barleyย (I always buy this in the bulkย section of my Kroger/Smith’s grocery store)
3 1/2 cups chicken brothย (or you can use water andย bouillon)
1 cup water
1 (14.5 oz) can petite diced tomatoesย (I like the petiteย because they aren’t such big chunks and therefore you can hide them better fromย picky kids)
3/4 tsp salt
1/4 tsp black pepperย (or more to taste)
1 bay leaf
2 cups diced mushroomsย (you can leave this out but weย super love mushrooms at our house)

3. Broccoli Cheddar Soup
A Gluten Free and Lighter version of Cheesy Creamy Broccoli Soup...it's also made in the slow cooker for ultra ease and no fuss!

Ingredients you’ll need for this soup:

1 lb yellow butter potatoes
2 cups chicken brothย (orย veggie broth)
1 medium yellow onion, diced
1 tsp olive or canola oil
2 green onionsย (greenย and white parts all diced up)
2 garlic cloves, minced
1/4 tsp ground thyme
1/2 tsp salt
1/8 tsp pepper
1 lb frozen broccoli florets, thawedย (I justย kept them on my counter all morning)
2 oz extra sharp cheddar cheese, gratedย (usingย extra sharp will give ultimate flavor so you don’t have to use as much)
1/2 cup half and halfย (you canย also use fat free half and half)

4. Green Chicken Chili with Avocados

Ingredients you’ll need for this soup:

2 lbs tomatillos (about 10 medium)
1 small white onion
2 Tbsp minced garlic
4 tsp cumin
2 tsp ground coriander
1 1/2 tsp minced canned chipotles in adobo sauce
2 tsp canola oil
3 cups chicken broth
2 lbs boneless, skinless chicken thighs, trimmed of excess fat
1 (4 oz) can diced green chiles
1 (14.5 oz) can great northern beans, drained and rinsed
1 tsp kosher salt
1 fresh lime, juiced
Salt and pepper
3 Tbsp cornstarch
Toppings: avocado slices, cilantro, tortilla chips, grated cheese,
sour cream

Ingredients you’ll need for this soup:

1/2 cup
diced white onion
1 garlic clove, minced
1/2 tsp canola oil
1/8 tsp ground nutmeg
1/8 tsp cayenne pepper
3 cups chicken broth (or 3 cups vegetable broth)
1/2 head cauliflower
8 oz yellow potatoesย (this was just one large potato)
1/4 tsp salt
1/4 cup half and half (or heavy cream)
Salt and pepper, to taste
2 Tbsp diced Green onion (optional)
1/4 cup grated cheddar (optional)
1/4 cup bacon bits (optional)

1 lb ground turkey
1 medium yellow onion, diced
2 minced garlic cloves
2 Tbsp tomato paste
1 1/2 tsp salt
1 cup dry green lentils
2 cups water
1 (8 oz) can tomato sauce
1 (14.5 oz) can petite diced tomatoes
1 (4 oz) can diced green chiles
2 tsp chili powder
1 tsp cumin
1/2 tsp pepper

    I hardly ever my slow cooker for soup…I'm excited to have some new recipes to try! I make soup several times a week. It's such great comfort food when the winter chill sets in. I am excited to try some of the recipes in this collection!
