Description

Creamy, cheesy pasta and smoked sausage with sauerkraut. An easy Instant Pot recipe for 2 (or 3). 


Ingredients

Scale
  • 1 Tbsp butter
  • 6 ounces sliced beef smoked sausage or kielbasa, sliced into quarter inch rounds
  • 1 1/2 cups chicken broth
  • 4 ounces penne pasta
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1 (8 oz) can sauerkraut, rinsed and drained
  • 1 1/2 tsp Dijon mustard
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the smoked sausage and brown for about 3-4 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the penne pasta, garlic powder, onion powder, pepper. Dump the sauerkraut and mustard on top.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the cheese. Serve and enjoy!
