Want to make dinner for cheap? Try this easy Instant Pot or Crockpot soup with ground beef, potatoes and vegetables.

- 1 pound lean ground beef
- 2 Tbsp dry minced onion
- 1 tsp black pepper
- 2 tsp garlic powder
- 3/4 tsp kosher salt
- 4 cups beef broth
- 1 pound potatoes, peeled and cubed
- 1 (10 oz) can Rotel
- 1 (8 oz) can tomato sauce
- 2 tsp Worcestershire sauce
- 1 (16 oz) package frozen vegetables
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown the beef for about 5 minutes. Drain off excess grease.
- Stir in the onion, pepper, garlic powder and salt.
- Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Add in the potatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 4 minutes. When time is up move valve to venting and remove the lid.
- Stir in the Rotel, tomato sauce, Worcestershire sauce and frozen vegetables. Heat the vegetables through on the saute setting.
- Season to taste. Ladle into bowls and serve.
Slow Cooker Instructions:
- Heat a pan over medium high heat and add in the the beef and break it up. Brown the beef for about 5 minutes. Drain off excess grease. Add to the slow cooker.
- Stir in the onion, pepper, garlic powder and salt.
- Stir in the broth, potatoes, Rotel, tomato sauce and Worcestershire sauce.
- Cover and cook on low for 3 hours.
- Add in the vegetables and cook on low for 1 more hour.
- Season to taste. Ladle into bowls and serve.
