Description

Ultra flavorful and creamy chicken that’s healthy, low in calories and high in protein. Make it in your Instant Pot or slow cooker. 


Ingredients

Scale
  • 1/2 cup chicken broth
  • 1 3/4 pounds boneless skinless chicken breast (frozen or fresh)
  • 2 tsp garlic powder
  • 1 tsp italian seasoning
  • 1 tsp onion powder
  • 1 tsp pepper
  • 1 tsp kosher salt
  • 1/2 tsp poultry seasoning
  • 1/8 tsp smoked paprika
  • 1 cup cottage cheese

Instructions

Instant Pot Instructions:

  1. Add broth and chicken into bottom of Instant Pot. Sprinkle the chicken with garlic powder, italian seasoning, onion powder, pepper, salt, poultry seasoning and paprika.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes on low pressure for frozen chicken or 12 minute for fresh chicken. When the time is up let pot sit for 10 minutes (or longer) and then move valve to venting and remove the lid. 
  3. Move chicken to a cutting board. Shred or chop. Stir back into the juices in the Instant Pot. 
  4. Blend the cottage cheese until smooth. Scrape into the Instant Pot and stir. 
  5. Serve chicken and sauce over rice, potatoes or noodles or plain.

Slow Cooker Instructions:

  1. Add broth and chicken into bottom of slow cooker. Sprinkle the chicken with garlic powder, italian seasoning, onion powder, pepper, salt, poultry seasoning and paprika.
  2. Cover and cook on low for 4 hours, or until chicken is cooked through and reaches 165 degrees.
  3. Move chicken to a cutting board. Shred or chop. Stir back into the juices in the slow cooker. 
  4. Blend the cottage cheese until smooth. Scrape into the slow cooker and stir. 
  5. Serve chicken and sauce over rice, potatoes or noodles or plain.
