Description
A quick Instant Pot taco-style beef and rice bowl made with Rice-a-Roni, tomato sauce, and corn, finished with your favorite toppings like cheese, sour cream, and salsa.

- 1 pound lean ground beef
- 1/2 cup diced onions
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1 tsp chili powder
- 1 1/4 cups water
- 1 (6.4 oz) box Mexican style Rice-a-Roni
- 1 (8 oz) can tomato sauce
- 1 cup frozen sweet corn
- For topping: shredded cheddar, sour cream, diced green onions, salsa
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, salt, pepper, cumin and chili powder. Brown for 5 minutes.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the contents of the rice-a-roni box. Then dump the tomato sauce and corn on top. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir well. Scoop onto plates and top with desired toppings.
