Description

A quick Instant Pot taco-style beef and rice bowl made with Rice-a-Roni, tomato sauce, and corn, finished with your favorite toppings like cheese, sour cream, and salsa.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 cup diced onions
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • 1 1/4 cups water
  • 1 (6.4 oz) box Mexican style Rice-a-Roni
  • 1 (8 oz) can tomato sauce
  • 1 cup frozen sweet corn
  • For topping: shredded cheddar, sour cream, diced green onions, salsa

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions, salt, pepper, cumin and chili powder. Brown for 5 minutes.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the contents of the rice-a-roni box. Then dump the tomato sauce and corn on top. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir well. Scoop onto plates and top with desired toppings.
