Description
Beef and hominy soup requires just 4 main ingredients and cooks in your Instant Pot or slow cooker for a surprisingly flavorful meal.

- 1 cup chopped onion
- 16 oz beef bottom round roast, cut into cubes (mine was labeled as carne asada)
- 1 (25 oz) can Mexican-style hominy, drained
- 2 Tbsp chili powder
- 4 cups beef broth
- Salt and pepper
- Optional: lime juice
Instructions
Instant Pot Instructions:
- Add onion, beef, hominy, chili powder and broth to Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 20 minutes. When time is up let pot sit for 10 minutes and then move valve to venting.
- Taste test and add salt and pepper to taste (I added in ½ tsp of salt). Ladle into bowls and squeeze a wedge of lime into each bowl, if desired.
Slow Cooker Instructions:
- Add onion, beef, hominy, chili powder and broth into slow cooker.
- Cover and cook on low for 6 hours.
- Taste test and add salt and pepper to taste (I added in ½ tsp of salt). Ladle into bowls and squeeze a wedge of lime into each bowl, if desired.
