Description

This slow cooker cheesy tomato chicken is an easy dump-and-go dinner made with tender chicken thighs simmered in a buttery tomato sauce and finished with melty mozzarella and parmesan.


Ingredients

Scale
  • 1 (28 oz) can crushed tomatoes
  • 4 Tbsp butter
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbsp minced garlic
  • 1/2 tsp kosher salt
  • 1 Tbsp tomato paste
  • 24 oz boneless skinless chicken thighs, trimmed of excess fat
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded parmesan

Instructions

  1. Add tomatoes, butter, onion powder, garlic powder, minced garlic, salt and tomato paste into slow cooker. Stir. Nestle the chicken into the slow cooker.
  2. Cover and cook on low 4 hours. 
  3. Break up the chicken and stir in the mozzarella and parmesan.
  4. Serve chicken and sauce over hot cooked pasta, if desired. You can also stir the cooked pasta into the slow cooker to coat it entirely in sauce.
