Description

A lasagna casserole full of beef, pasta, cheese and red sauce that’s made quickly with your Instant Pot. 


Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Pinch of cayenne pepper
  • 2 cups beef broth
  • 6 ounces lasagna noodles (about 7 lasagna noodles)
  • 1 (25 oz) jar marinara sauce (I used Mezzetta brand)
  • 1/2 cup shredded whole milk mozzarella cheese
  • 1/2 cup cottage cheese or ricotta cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease.
  2. Stir in the salt, pepper, garlic powder, Italian seasoning and cayenne.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  4. Break the lasagna noodles into about 2 inch pieces and lay them into the Instant Pot.
  5. Pour the sauce over the top of the noodles. Don’t stir.
  6. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting and remove the lid. 
  7. Stir well. Scoop onto plates and top each serving with a 2 tablespoons or mozzarella and cottage/ricotta cheese. Top with some fresh basil, if desired. Enjoy!
