Correspondent, Gina, was at this competition…what do you have for us, Gina?
The fruit, nut, and wheat berry salad was the clear winner in our family. The salad was chewy, crunchy, nutty, and fruity. It had a great combination of flavors. The orange zest gave it a great flavor. We liked how the wheat berries were chewy. I was nervous when the recipe called for vinegar and salt and pepper, but no worries, it was great. It would be nice for a potluck side dish. The barley with pine nuts didn’t favor so well. I liked the pine nuts but it was just a okay side dish. We probably wouldn’t make that again.
My husband and I love the wheatberry salad. He loves to take the leftovers for lunch the next day. It is very different, so I’m anxious to see how it will do in the next round with new tastebuds reviewing it.
