We made both recipes together and compared side by side. In our family the cashew chicken edged out the chicken chili. It was close. We felt that if the cashew chicken were a little less potent (maybe add 1 C of water to the crock?) and finished off with something fresh, like chopped cilantro and fresh scallions, it would have been the easy favorite. No pics, sorry, but I had the flu and it was about my limit to make to dinners 🙂 We would make both again. With the chili, I used kidney beans because we like them more, and I added 1 extra can. It was a great mixture of chili and sweet, it would have been great with a salty side, like jalapeno cornbread.
Thanks, Teresa. I love the cashew chicken. Maybe adding a half cup of chicken broth might make it less potent. My husband loves the strong flavor so I will continue to make it, as is.
