Description

Creamy, dreamy noodles with chicken, ham and three types of cheese. An easy and scrumptious Instant Pot recipe. 


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 2 1/2 cups chicken broth
  • 8 ounces uncooked spaghetti
  • 1 (8 oz) package cubed ham
  • 2 cups chopped, cooked chicken (such as rotisserie)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 tsp garlic powder
  • 1 cup cottage cheese
  • 1 cup shredded cheddar
  • 1/2 cup shredded parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute for 4 minutes.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Break spaghetti in half and lay it in a criss cross pattern into the pot. 
  4. Dump the ham, chicken, cream of chicken and garlic powder on top evenly.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. Blend the cottage cheese until smooth and creamy. Add it into the pot along with the cheeses. Taste test and salt and pepper to taste. 
  7. Serve and enjoy!
