French Onion Chicken Orzo Casserole

Description

An easy Instant Pot dinner with tender chicken and creamy orzo with savory caramelized onions, Parmesan cheese and crispy French fried onions.


Ingredients

  • 2 Tbsp butter
  • 1 large yellow onion, halved and sliced
  • 1/2 tsp baking soda
  • 6 garlic cloves, minced
  • 2 cups water
  • 1 tsp Worcestershire sauce
  • 1 tsp balsamic vinegar
  • 2 Tbsp Better than Bouillon beef base
  • 8 oz orzo
  • 3 1/2 cups rotisserie chicken, cubed
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1/4 cup heavy cream
  • 2 oz shredded mozzarella
  • 2 oz shredded parmesan cheese
  • Crispy french fried onions, for topping

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and the baking soda. Toss in the butter until the onions get softened and they turn yellow. Stir in the garlic.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the Worcestershire, balsamic and beef base until it dissolves. Turn off Instant Pot.
  3. Sprinkle in the orzo. Add chicken, thyme and pepper on top.
  4. Cover and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid and stir.
  5. Stir in the heavy cream, mozzarella and parmesan.
  6. Scoop onto plates and top each portion with a couple tablespoons of french fried onions.
