French Onion Cheesy Chicken Noodle Casserole

Description

An Instant Pot dinner made with tender chicken, egg noodles, caramelized onions and French onion dip for an easy creamy pasta dinner. 


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1/2 tsp baking soda
  • 1 3/4 chicken broth
  • 8 oz old fashioned wide egg noodles
  • 12 oz boneless skinless chicken breast or thighs, cut into bite size pieces
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepepr
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 cup french onion sour cream dip
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the oil and swirl around. Add in the onion and baking soda. Toss and sauté for 3-4 minutes. Onions will get really yellow. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the noodles and lay the chicken on top. Sprinkle with salt, pepper, garlic powder and onion powder.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the dip and the parmesan cheese. 
  6. Serve and enjoy!
