Description

Flag Day Casserole is an easy dinner you can make in your Instant Pot with seasoned ground beef, crispy bacon, cubed potatoes, cheddar cheese and don’t forget the dill pickles! Like a bacon cheeseburger but better!


Ingredients

  • 1 1/2 pounds red potatoes, cut into cubes
  • 1 pound lean ground beef
  • 2 tsp Montreal steak seasoning, divided
  • 1 cup sour cream
  • 1 cup diced dill pickles, divided
  • 1 medium tomato, diced
  • 1 cup shredded cheddar cheese, divided
  • 5 slices of crispy cooked bacon
  • Ketchup and mustard

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Place the potato cubes into a steamer basket. Drop the steamer basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid. 
  2. Move the steamer basket out of the pot. Set aside. Discard the water and dry out the pot. Place liner back into the Instant Pot. Turn Instant Pot to sauté setting. When display says HOT add in the ground beef and break it up. Brown for about 5 minutes. Drain off any excess grease. 
  3. Stir in 1 teaspoon of the steak seasoning to season the meat. Add the potatoes, the rest of the steak seasoning, sour cream, half of the pickles, tomato and half of the cheese into the pot. Stir gently to combine and coat potatoes with sour cream. 
  4. If using an air fryer lid: sprinkle the rest of the cheese over the top and crumble the bacon and sprinkle it on top. Place air fryer lid on top and bake for 5 minutes at 300 degrees. If using an oven: scrape the mixture into a 8×8 inch baking dish. Sprinkle the rest of the cheese over the top and crumble the bacon and sprinkle it on top. Bake at 350 degrees for 20 minutes. 
  5. Scoop onto plates and serve topped with the rest of the pickles, a squirt of mustard and ketchup.
