Description
Instant Pot smoked sausage, red potatoes and cabbage with Old Bay seasoning. An easy one pot meal!
Ingredients

- 2 Tbsp butter, divided
- 6 ounces beef smoked sausage, sliced
- 1/2 cup diced onion
- 1/2 cup chicken broth
- 10 ounces red potatoes, cut into 1/2 inch cubes
- 3 cups chopped cabbage
- 1 1/4 tsp old bay seasoning
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in 1 Tbsp of butter and let it melt. Add in the smoked sausage and let it brown for a couple minutes. Then add in the onion and saute until it softens.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in the cabbage, potatoes and old bay seasoning. Place the remaining tablespoon of butter on top.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes then move the valve to venting. Remove the lid.
- If desired you can use a cornstarch slurry to thicken the sauce. Turn your Instant Pot to the saute setting. In a small bowl stir together 1 Tbsp of cornstarch with 1-2 Tbsp of water, until smooth. Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly.

Notes
This recipe only makes about 3 servings, you may want to double it. Do not double the amount of broth but double all other ingredients and keep the cooking time the same.
