Description

A creamy, cheesy chicken casserole with sweet corn, and a ranch-seasoned yogurt-mayo blend and a topping of crispy potato chips.


Ingredients

  • 1/3 cup plain greek yogurt
  • 1/3 cup mayonnaise
  • 1 Tbsp dry ranch dressing mix
  • 1 tsp Worcestershire sauce
  • 1 1/2 tsp lemon juice
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp kosher salt
  • 3 cups chopped rotisserie chicken
  • 2 ears corn, kernels cut off the cob (or 1 cup of sweet frozen corn, thawed)
  • 1 cup shredded cheddar cheese
  • 1 cup crushed potato chips (about 35 grams)

Instructions

  1. Heat oven to 350° F.
  2. In a mixing bowl whisk together yogurt, mayo, ranch dressing mix, Worcestershire, lemon juice, onion powder, pepper and salt.
  3. Fold in the chicken, corn and cheese.
  4. Spread the mixture in a 8×8 inch baking dish. Sprinkle the crushed potato chips on top.
  5. Bake for 30 minutes.
  6. Serve and enjoy!
