Description

An easy ground beef or turkey dinner made with salsa, cream cheese, corn and crispy tater tots for the ultimate comfort food meal.


Ingredients

Scale
  • 16 oz ground beef or ground turkey
  • 1 cup diced onion or 2 Tbsp dry minced onion
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp tomato paste
  • 1 cup chicken or beef broth
  • 4 oz cream cheese
  • 1 cup frozen corn
  • 1 cup salsa or picante sauce
  • 1 Tbsp cornstarch
  • 1 cup shredded cheddar
  • 16 oz tater tots

Instructions

  1. Heat oven to 400° F.
  2. Heat a cast iron skillet (or a frying pan that can go in the oven) over medium high heat. Add in the beef/turkey and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, chili powder, garlic powder, Worcestershire and tomato paste. 
  3. Stir in the broth, cream cheese, corn and salsa and heat through until cream cheese is melted and incorporated. 
  4. In a small bowl stir together cornstarch with 1 Tbsp of cold water until smooth. Stir the mixture into the pan to thicken the sauce. 
  5. Stir in the cheddar until melted. 
  6. Add the tater tots on top and bake for 40 minutes. 
  7. Serve and enjoy!
