Makes 6 servings
1 (8 oz) can tomato sauce
1 (14.5 oz) can diced tomato in juice
1 (14 oz) can pinto beans, drained and rinsed
1 (14 oz) can black beans, drained and rinsed
1 (14 oz) can corn, drained
2 (10 oz) cans green enchilada sauce
1 lb ground beef, browned and drained of grease
2-3 Tbsp taco seasoning
Salt and pepper
Tortilla chips, sour cream, grated, cheese and avocado slices, for serving
1. Place tomato sauce, diced tomatoes, beans, corn, enchilada sauce, beef and 2 Tbsp taco seasoning in slow cooker.
2. Cover and cook on LOW for about 4-6 hours or on HIGH for 2-3 hours.
3. Remove lid and add additional taco seasoning, if needed. Salt and pepper to taste, if needed.
4. Serve with desired toppings

This was so easy! I had frozen ground beef that had already been browned so I just threw that in after opening a few cans and voila I was done. This is my perfect meal to serve to my family or to bring to someone else’s family (it’s so easy, cheap and kids love it as long as you add the chips and cheese). I cooled mine down with some sour cream because it was a bit spicy with the enchilada sauce. 4 stars.
Made this today and it was AMAZING! Seriously one of the best soups I've had in a while and it was SO easy! I also used some frozen beef that was already browned. I used tomatoes that I had canned and frozen corn and it was fabulous.
also, add in frozen corn instead and fresh tomatoes instead of canned would help.

We are trying to watch our sodium intake…and our little local store doesn't offer many "low sodium" canned versions of things…any suggestions to lighten the sodium load? I mean, all the canned ingredients and taco seasoning…I'm sure the salt content is high for this..
I suggest using dried beans instead. You can soak them overnight and then add them to the soup before you put it in the crock. You will probably need to increase the cooking time, however. Plus, dried beans are so much cheaper(1/2 cup dried beans per can). You can also control sodium levels by making your own taco seasoning (http://m.allrecipes.com/recipe/46653/taco-seasoning-i).
