I just got back from a beautiful Caribbean cruise and totally forgot about posting Easter crockpot ideas. I’m sure many of you have leftover ham and have some great recipe ideas to use with it. If so, leave a comment of a link of where to find the great recipe or the recipe itself. As for me and my house, we don’t eat ham all the much (Greg…not a big a fan) but I do have one great slow cooker ham recipe. It’s a soup. But if your weather is in anyway like the weather here…soup is not a problem. Even in Maypril. (Boo! Hence, the cruise)

Split Pea Soup
Rinse and drain a bag of dried split peas. Grate 1 whole carrot (or a handful of little carrots) and add a small handfull (2 Tbsp.) of dried onions. Add Ham Bone and enough water to barely cover. Cook forever(My MIL says) About 10 hrs. on Low, maybe 6 on High. When peas are soft it's ready to eat. You can add extra Ham if you want.
Cooking up some Ham and Potato Soup today, recipe from my MIL…
about 10 small-med. potatoes thinly sliced, 2 cups chopped ham, 1 can cream of mushroom soup plus 1 can of water, 1/4 cup dried onions or small onion chopped.
Cook on Low 10 hrs. or High for 7 hrs.
After potatoes are soft, add 1 cup shredded cheddar cheese and 8 oz. cream cheese or sour cream just before serving.
