Description

When you don’t know what to make for dinner and you have limited time and ingredients try this easy peasy cheesy hamburger and rice casserole in your Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1/2 tsp kosher salt
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp poultry seasoning
  • 2 1/2 cups chicken broth
  • 1 2/3 cup long grain white rice or converted rice
  • 1 1/2 cups frozen sweet white corn
  • 1 (10.5 oz) can Campbell’s cream of mushroom soup
  • 1 cup shredded colby jack cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. 
  2. Stir in the salt, pepper, garlic powder and poultry seasoning. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  4. Sprinkle in the rice evenly. Dump in the corn and the cream of mushroom soup. Don’t stir.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes on high pressure. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  6. Stir in the cheese. Scoop onto plates and serve.
