Description
A Cajun-inspired one-pot meal featuring smoky sausage, tender chicken, and flavorful rice cooked to perfection in the Instant Pot.

- 1 Tbsp olive oil
- 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
- 1 cup diced onion
- 2 ribs of celery, sliced
- 1 green bell pepper, cored and diced
- 6 garlic cloves, minced
- 1 1/2 cups chicken broth
- 1 cup converted rice
- 4 boneless, skinless chicken thighs, each cut into 4 pieces
- 1/4 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp dried parsley
- 1 tsp cajun seasoning
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for a couple minutes on each side. Then add in the onion, celery and green pepper. Saute for 3 minutes. Add in the garlic and saute for 30 seconds.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Place the chicken on top. Sprinkle in the paprika, pepper, parsley and cajun seasoning.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir. Scoop onto plates and serve.
