Description

A Cajun-inspired one-pot meal featuring smoky sausage, tender chicken, and flavorful rice cooked to perfection in the Instant Pot.


Ingredients

  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
  • 1 cup diced onion
  • 2 ribs of celery, sliced
  • 1 green bell pepper, cored and diced
  • 6 garlic cloves, minced
  • 1 1/2 cups chicken broth
  • 1 cup converted rice
  • 4 boneless, skinless chicken thighs, each cut into 4 pieces
  • 1/4 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp dried parsley
  • 1 tsp cajun seasoning

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and brown for a couple minutes on each side. Then add in the onion, celery and green pepper. Saute for 3 minutes. Add in the garlic and saute for 30 seconds. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Place the chicken on top. Sprinkle in the paprika, pepper, parsley and cajun seasoning. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir. Scoop onto plates and serve.
