Description
Creamy chicken and rice with artichokes and cheddar made in the Instant Pot. An easy dump and go recipe.
Ingredients

- 2 cups water
- 2 (4 ounce) packages Farmhouse or Ben's Long Grain and Wild Rice with seasoning
- 2 cups chopped, cooked rotisserie chicken
- 1 (14 oz) can artichoke hearts, drained and chopped
- 1/2 tsp tarragon
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 2 ounces cream cheese
- 1/2 cup shredded sharp cheddar cheese
Instructions
- Pour water into Instant Pot. Sprinkle in the rice and seasonings. Add in the chicken, artichoke hearts, tarragon, garlic powder, pepper and cream cheese.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove lid.
- Stir. Add in the cheddar and stir. Serve and enjoy.
