Description

Creamy chicken and rice with artichokes and cheddar made in the Instant Pot. An easy dump and go recipe.


Ingredients

Scale
  • 2 cups water
  • 2 (4 ounce) packages Farmhouse or Ben's Long Grain and Wild Rice with seasoning
  • 2 cups chopped, cooked rotisserie chicken
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 1/2 tsp tarragon
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 ounces cream cheese
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  1. Pour water into Instant Pot. Sprinkle in the rice and seasonings. Add in the chicken, artichoke hearts, tarragon, garlic powder, pepper and cream cheese.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove lid.
  3. Stir. Add in the cheddar and stir. Serve and enjoy.
