Serves 12 (I halved the recipe)
4 pounds chicken drumsticks
2 onions, chopped
6 cloves garlic, minced
1/2 cup peanut butter
1 14 oz can diced tomatoes, undrained
1 6 oz can tomato paste
1/3 cup low sodium soy sauce
1 cup chunky mild or medium salsa
2 tbsp minced gingerroot
1/4 tsp pepper
1/2 tsp hot pepper sauce (I left this out)
2 cups chopped peanuts
1. Place drumsticks in a 6-7 quart slow cooker. Add onions and garlic. In medium bowl, stir together remaining ingredients except peanuts. Pour into slow cooker.
2. Cover and cook for 6-8 hours on low, or until internal temperature reaches 170 degrees. Remove chicken from slow cooker and roll each piece in the chopped peanuts. Arrange or broiler pan. Preheat broiler.
3. Broil chicken 6 inches from heat source, turning frequently, until browned, about 6-8 minutes. Serve immediately.

I was very excited to try this recipe because I love Thai food. I was a little disappointed though. It tasted fine but nothing too exciting…certainly not as good as this Thai dish. 3 stars.
