Day 87: Coke Pork Chops

This is another guest post by my friend, Mindy. Thanks Mindy, this looks great!

4 pork chops
1 C barbecue sauce
1 can Coke
1/2 C ketchup

Combine all ingredients in a crock pot. Cook on high 4-5 hours.

Review
This recipe originally calls for chicken, but I decided to try the pork chops. It was so good and simple. The meat fell apart when wewere dishing it up. 4 stars.

    We just had this for dinner. I broke my ankle a month ago and just had surgery on it a few days ago so I've been very absent from the kitchen. My 8 year old daughter did most of the "work" on this one!!! I pulled the pork from the freezer and started it in the microwave to defrost. She watched it and rotated it, etc. until it was defrosted. I pulled out the crock pot and plugged it in. I showed her how to measure out the ingredients in a large measuring cup (while sitting in my recliner with my foot up), she poured on the soda, stirred up the "glop", then poured it over the chops in the crock pot (accompanied by a lesson on dangers of raw meat). She felt great for making dinner "all by herself" and the food was FANTASTIC. And I spent only about 30 seconds in the kitchen on my crutches. I gotta teach her how to measure the rice into the rice cooker, then add in a simple tossed salad and dinner is done. Total WIN!!!
