Serves 2
2 teaspoons olive oil
Two 1 inch thick boneless center, cut pork chops
2/3 cup chunky tomato salsa, fresh or jarred
1 tbsp lime juice
1 tbsp orange juice
Squeeze of fresh grapefruit juice
1. In a heavy skillet over high heat, heat the olive oil and quickly sear and brown the pork chops on both sides. (I skipped this step) Place the pork chops in the slow cooker.
2. In a small bowl, combine the salsa and juices, and pour over the pork. Cover and cook on HIGH for 3 to 4 hours, until the meat is tender. Serve immediately.

I loved the sauce on this dish. The combo of lime, orange, and grapefruit was really flavorful. I’m not the biggest fan of pork chops though so I think if I make it again I’ll make the sauce and serve it over chicken. 3 stars.
We loved this dish and had it over rice. My salsa was a little too spicy for me so after pulling out the pork, I added a little sour cream to the sauce and it was devoured! Thanks for all the dinner ideas!
