1 lb boneless, skinless chicken thigh tenders or chicken thighs cut into bite-size pieces
1/2 medium onion, chopped
2 celery ribs, finely chopped
2 medium potatoes, peeled and cut in cubes
2 carrots, shredded or finely diced
1/2 tsp dried thyme
1 T ketchup
1/4 tsp black pepper
2 cups chicken broth
Add chicken, onion, celery, potatoes, carrots, ketchup and broth to slow cooker. Cover and cook on LOW for 6-7 hours and then add in the thyme and pepper. Cook for another 30 minutes on HIGH. Makes 4 servings.

I love making soups in the slow cooker. It’s so easy and you literally fix it and forget it until it’s time to serve. This one was tasty. If you prefer noodles over potatoes just omit the taters and add in hot cooked noodles at the end. 3 1/2 stars.
