Day 354: No Bake Cookies

1 cup semi-sweet chocolate chips

2 Tbsp butter
1/4 cup peanut butter
1 cup quick oats
6 Tbsp powdered sugar
1/2 tsp vanilla

Combine chocolate, butter and peanut butter in slow cooker. Cover and cook on HIGH for 1 hour. Stir and add oats, powdered sugar and vanilla. Drop by spoonfuls onto waxed paper. Let cool and serve. Makes 10-15 servings.

This is a little twist on a favorite cookie of mine. Why would you ever want to make no bake cookies in your slow cooker, you ask? My sister, Nicole, who is a chocoholic told me this story that made me chuckle,
“When we were Freshman in college, there was a bad storm at the very beginning of the school year. The electricity went out and since it was going to take a few days to get it back on, they had to use the generators. But we weren’t supposed to use any big appliances like a stove or oven. We were really in the mood for something chocolate and I remembered that I had a recipe for No Bakes in the crock pot. So we started making the cookies in the crock pot but apparently the dorm leader could smell the cooking chocolate wafting through the halls. When we heard a knock on our door, we hurried and hid the crock pot under the sink and answered the door. I think she said she smelled something and we lied and said we weren’t cooking anything.”
So there you have it…a good reason to make no bakes in your slow cooker. These were a more fudge-like consistency than the stove top originals. But were equally as good and eaten just as fast. 4 stars

    I make these pretty often but I just make them on the stove top. It's alot quicker! They are delicious.

    My daughter is a nurse and they are having a run next weekend. She asked me to make something for the baked goods stand. I just found the recipe I am going to make. We won't tell her they are not baked.

    These actually take a lot less time tho if you do it stove top.

    Another reason to use a slow cooker: a classroom activity. I like to give my students hands on experiences with measuring and I don't have access to a kitchen so my slow cooker it is!! Thank you for the recipe.
