Day 341: Herbed Tomato Artichoke Chicken with Fettucine

 3/4 lb boneless, skinless chicken breasts

1 (14 oz) can diced tomatoes, drained
1 (14 oz) can artichoke hearts in water, drained
1/3 cup chopped onion
1/2 cup chicken broth
3 Tbsp quick-cooking tapioca
2 tsp curry powder
1 tsp dried parsley flakes
1 tsp basil
1 tsp thyme
1/4 tsp salt
1/4 tsp black pepper
Cooked fettuccine noodles

Combine all ingredients, except noodles in slow cooker. Mix thoroughly. Cover and cook on LOW for 6 hours on or on HIGH for 3 1/2 hours. Serve over fettuccine noodles. Makes 3-4 servings.

Review:
This was a very flavorful and a bit spicy dish. The curry powder was very prevalent. I enjoyed it the day of and the leftovers as well. I give this 3 stars.

    Yes, I used the Kraft Minute Tapioca. It's granulated…good luck!

    cooking tapioca??? what is that??? like in the pudding tapioca???

    Just want to make sure i've got the right stuff. I got Reese instant Tapioca – granulated. Is that the same stuff.
