Makes 6 servinigs
1 lb uncooked bonelss, skinless chicken breast, cubed
3 cups fat free chicken broth
3/4 cup water
1 1/2 cup uncooked brown rice
4 oz reduced fat, smoked turkey sausage, diced
1/2 cup celery thinly sliced
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
2 tsp cajun seasoning
2 garlic cloves, minced
1/8 tsp hot pepper sauce, optional
1 bay leaf
14 1/2 oz can no salt diced tomatoes, undrained
3 cups fat free chicken broth

14 1/2 oz can no salt diced tomatoes, undrained
1. In a large nonstick skillet, saute chicken 2-3 minutes.
2. Stir together remaining ingredients in slow cooker.
3. Add sauteed chicken.
4. Cover. Cook on high 6 hours.
Per serving: 370 calories, 7 g total fat, 620 mg sodium, 42 g total carbohydrate, 34 g protein

I give this recipe 3 stars. I didn’t use the hot pepper sauce and at the end I added a can of tomato sauce and mixed it in. I also didn’t saute the chicken. I just added in frozen chicken tenders. I liked this recipe. It was different than the things I usually make. I felt like it wasn’t too hot or spicy, which in my case is a good thing. I did add the tomato sauce because I felt like it could be a little more saucy. I loved that they call for brown rice. It turned out so fluffy and yummy.
