2 lbs red potatoes, cut into 1/2 inch wedges
1/4 cup finely chopped yellow onion
1 1/2 tsp dried oregano
1/2 tsp salt
Black pepper to taste
2 Tbsp butter, cut into 4 pieces
1/4 cup grated Parmesan cheese
Layer potatoes, onions, oregano, salt, pepper and butter in slow cooker. Cover; cook on HIGH for 4 hours. Sprinkle with cheese and serve. Makes 6 servings.
Review:
I like these potatoes pretty well when I served them with dinner. They were a little lacking in flavor. However, as I was cleaning up after dinner and transferring the remaining potatoes to the plastic tupperware I noticed that all the butter, onions, and Parmesan were on the bottom of the slow cooker. The leftovers were much more flavorful. So make sure to stir and coat all the potatoes really well, before serving! 3 stars
