Day 285: Caramel Apples

Serves 4

4 very large tart apples, cored
1/2 cup apple juice
8 Tbsp brown sugar
12 hot cinnamon candies
4 Tbsp butter or margarine (I left this out)
8 caramel candies
1/4 tsp ground cinnamon
whipped cream

Remove 1/2 inch wide strip of peel off the top of each apple and place apples in slow cooker. Pour apple juice over apples. Fill the center of each apple with 2 Tbsp brown sugar, 3 hot cinnamon candies, 1 Tbsp butter, and 2 caramel candies. Sprinkle with cinnamon. Cover and cook on Low 4-6 hours, or until tender. Serve hot with whipped cream.

Review:
I was a little confused on this recipe because I filled the cored apples with the ingredients but it all just slipped out the bottom of the apples. The other thing was that the apples were too soft after the 4-6 hours. They just fell apart. They tasted good though and this recipe could be good if altered a little bit. Cook for less time and leave the bottom of the apples in tact instead of coring it completely. 3 stars.

    I understand why you would want to leave out the butter but… it's no longer caramel if you do that since caramel is butter and brown sugar. Also, if you wrap the bottom of each apple in foil it keeps the ingredients in :.)
