Day 204: Garlic Chicken and Veggies

Serves 2

1 carrot, sliced in thin long strips
1/2 red pepper, sliced
2 cups fresh broccoli florets
1/2 cup chicken broth
3 tbsp soy sauce
1/2 tsp garlic powder
2 boneless, skinless chicken breasts cut into thin long pieces or use desired number of chicken tenders

Combine carrot, pepper, broccoli, chicken broth, soy sauce, and chicken in 2-3 quart slow cooker. Stir. Sprinkle with garlic powder. Cover and cook on low for 4-5 hours until chicken is tender.

Review:
This dish turned out great and had ingredients that I usually have on hand. This is a yummy, healthy dish and the only problem with it was that there wasn’t enough! 4 stars.

    It was mashed potatoes and pinto beans…the pinto beans were from an earlier post.
