Description

Crispy Frito-crusted chicken tenderloins baked in the air fryer. 


Ingredients

Scale
  • 1/2 cup flour
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/4 cup sour cream
  • 2 eggs
  • 20 ounces chicken tenderloins
  • 4 cups chili cheese Fritos
  • Non-stick cooking spray

Instructions

  1. On one plate add the flour, salt, pepper, garlic powder, onion powder, chili powder, cumin and smoked paprika. Mix well. 
  2. In a medium bowl whisk together the sour cream and eggs. 
  3. Crush the Fritos as finely as possible. 
  4. Coat each piece of chicken in the flour mixture making sure it’s fully coated. Then submerge it in the egg mixture letting the egg wash drip off before rolling the chicken in the crushed Fritos.
  5. Spray each piece of chicken with a bit of cooking spray and place in the air fryer. You may need to work in batches. You don’t want the chicken to be overcrowded in the air fryer. Air fry for 5 minutes at 375° F and then flip over and air fry for 4-5 more minutes or internal temperature of chicken reaches 165° F. 
  6. Serve with ranch dressing and enjoy!

Notes

You can also bake this chicken in a baking dish. Bake at 350° F for 20 minutes, or internal temperature of chicken reaches 165° F.
