Description

An easy crockpot dinner made with tender Yukon gold potatoes, smoky sausages, Cajun seasoning and a creamy, cheesy sauce.

Ingredients

Scale
  • 2 pounds yukon gold potatoes, cubed
  • 12 oz Little Smokies
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp cajun seasoning
  • 1 (10.5 oz) can cream of chicken and herbs
  • 1/2 cup sour cream
  • 1/4 cup milk or evaporated milk
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Cut potatoes into ½ inch cubes (I didn’t peel mine). Add them into the slow cooker.
  2. Stir in the weenies, onion powder, garlic powder, cajun seasoning, cream of chicken, sour cream and milk. Combine well.
  3. Cover slow cooker and cook on high for 3 hours or on low for 5 hours, or until potatoes are tender (all slow cookers cook differently).
  4. Gently stir in the cheddar. Top with green onions or chives, if desired and serve.
